Food and Environmental Allergies
Food and environmental allergies are of significant importance for all people in society. The Australian Society of Clinical Immunology and Allergy estimates that, in Australia and New Zealand, 1 in 3 people will develop allergies at some point in their lives, 1 in 5 will have allergic atopic dermatitis, 1 in 10 will have allergic asthma, 1 in 20 will develop a food allergy, and 1 in 100 will have anaphylaxis, a life-threatening allergy. If you do not have an allergy, you will undoubtedly know someone who does.
In this course you will complete an in-depth study of the physiology of allergy and the immune response, including allergy epidemiology, classification, signs/symptoms, and new scientific theories on the relationship between allergies, chronic stress, and autoimmune disease. Through comprehensive case studies, you will learn about all of the key food and environmental allergies - including allergies to peanuts, diary, soy, wheat, eggs, seafood, allergic rhinitis, insect bite/sting allergy, medication allergy, dander allergies, and contact allergies. You will also study a diverse range of accepted techniques for allergy diagnosis and management.

"Our way of life is for the most part, in direct opposition to the laws of Nature. It is its complexity, apart from the deliberate poisoning an emasculation of foods, has set up hazards that, paradoxically enough, require the utmost resistance to offset them; whereas, in fact, the well springs of our existence are gradually being destroyed." - C. Edward Burtis
